Summer fruits cheesecake

Pinks Syrups, natural fruit syrups made in Milton Keynes, England

Ingredients

7oz digestive biscuits, crushed
3oz butter, melted
3 tbsps Demerara sugar
3 eggs
9oz cream cheese
7 oz ricotta
8 fl oz double cream
8oz mixed fruit ( raspberries, blackberries, blackcurrants, red currants etc)
3 tbsps summer fruits syrup

Pre heat oven to 190 degrees

Mix the butter, biscuits and sugar together and press into the base of a 9 inch cake tin

Bake for 10 minutes until golden and crispy, remove from the oven.

Beat together the eggs, cream cheese and ricotta in a bowl

Lightly whip the cream and fold in the egg mixture

Pour the mixture into the tin and bake at 180 for 50-60 minutes until springy, you made need to cover the top with foil to stop it burning.

Remove from the oven and set aside

Mix the fresh fruit and the syrup together and spoon onto the top of the cheesecake.

Summer Fruit creams


serves 2

Ingredients

250g Greek yogurt
1 _ tbsp clear honey
150g blackberries
Summer fruits syrup

Beat the yogurt with the honey.

Divide half the blackberries between the two glasses, drizzle with a little summer fruits syrup, and then spoon over the yogurt.

Top with the remaining blackberries and a little more syrup.

Serve immediately.
