Mulled wine

Pinks Syrups, natural fruit syrups made in Milton Keynes, England

Ingredients

1 bottle red wine
75ml of Damson Syrup
1 cinnamon stick
Grated nutmeg
1 orange, halved
1 dried bay leaf
60ml / 2fl oz brandy (optional)

Put the wine & syrup in a saucepan with the orange, sugar, bayleaf and the spices.Heat gently - taste to see if you want the wine sweeter, add Demerara sugar if required.

Take off the heat, stir in the brandy.

Strain into heatproof glasses and serve at once.

Caramelised onions

Ingredients

1 tsp Olive oil
2 tbsps Damon syrup
1 Medium onion - sliced

Heat the oil in a frying pan.

Add the onion and fry for 1 minute.

Now add the damson syrup and fry for about 5 minutes, until all of the onion is covered with the syrup and it is soft and slightly browned.

Try serving this with a jacket potato and a grilled piece of cod.
