Hot peppered goats' cheese with a cranberry and orange dressing


Serves 2 Pinks Syrups, natural fruit syrups made in Milton Keynes, England

Ingredients

2 x 3oz goats cheese
1 tbsps of ground black pepper

For the dressing

125G/4oz fresh cranberries
Juice of two oranges
2 tbsps cranberry syrup
3 tbsps olive oil
Salt & pepper
Bag of baby salad leaves

Cut each cheese in half horizontally and press the pepper onto all sides.

Put the cheese in a non stick pan and fry for three minutes.

Turn over and cook for a further 2 minutes

Remove from the pan and set aside

Add the cranberries and orange juice and cook over a high heat for about a minute until the cranberries are hot and just cooked.

Remove from the heat and add the oil and cranberry syrup, season to taste.

Place the goats cheese on each plate, drizzle the dressing and serve at once with the salad leaves.
